CARVE American Grille to Open December 17

CARVE American Grille, a chef-driven restaurant by Perry’s Restaurants, is slated to open December 17 at Lantana Place in South Austin, Texas—across from YETI headquarters. The concept, by renowned restaurateur Chris Perry, will reinvent the American grille experience by paying tribute to the original butcher shop Perry’s father, Bob Perry, founded in 1979. The restaurant will utilize live-fire, smoke and wood grilling techniques across the menu, and pull inspiration from the restaurateur’s Perry’s Steakhouse & Grille, promising quality service to support the innovative menu of modernized comfort dishes.

THE MENU: MAINSTAYS & SPECIAL CUTS

CARVE will boast an innovative menu for lunch, brunch, dinner and happy hour, featuring dishes that incorporate fresh, eclectic ingredients from land and sea.  Celebrity chef and James Beard Award nominee Rick Moonen, Perry’s Master Development Chef, and the Perry’s Restaurants culinary team created signature items including new takes on traditional comfort dishes like Meatloaf Cupcakes, Lobster Corn Dogs and Vegan Salisbury Steak; wood-fired pizzas; healthy dishes like the Super Healthy Super Foods Salad and desserts like the Smoky S’More.

Perry’s is known for its iconic seven-finger-high pork chop, thus CARVE delivers this tradition with its own innovative pork specialties including an 18 oz. Long Bone Chicken-fried Pork Chop, the Hog Heaven (bacon-wrapped pork belly), and CARVE’s Open-Faced Pork Tamale. 

CARVE will also offer two trademark specials, Prime Rib Thursday Dinner including a 16 oz. prime rib mesquite-fired, caramelized and topped with CARVE steak butter and served with a twice-baked potato, available Thursdays from 4-10 p.m. for $35, and the Smoked Strip Friday Lunch including an 8 oz. CARVE smoked and sliced NY strip steak served with mashed potatoes, available every Friday from 11 a.m.- 3 p.m. for $16.

For weekend brunch (Saturdays and Sundays 11 a.m.-3 p.m.), guests can look forward to brunch starters like Hashbrown Breakfast Pizza, smoky and slushy brunch-inspired cocktails, brunch favorites like Chicken & Waffles, along with new creations like the Open-Faced Steak & Eggs PO’Boy, and family-friendly Brunch Dessert Griddle Cakes.

RAISING THE BAR

CARVE’s bar program, guided by Beverage Director and Corporate Sommelier Susi Zivanovic, will bring sustainability to the forefront by offering 25 wines on tap, each stored in 100-percent reusable kegs and offered in four pour sizes ranging from a tasting to a single glass, to a carafe. An interactive bar experience, guests will have the option to create a flight of three 2.5 oz. pours from the wines on tap list.  Wines by the glass and bottle are also available including Perry’s reserve wines.

The CARVE mixology list features a cocktail for everyone, from light and bright, to the unexpected, to those perfect for a savory pairing.  The unique Signature Sorbet Sundae Sour takes a classic whiskey sour to the next level by infusing the cocktail with mulled wine flavors from a hand-spun Perry’s Reserve Cabernet Sauvignon sorbet.  Zivanovic and the mixology team tapped into CARVE’s smoky persona to craft signature drinks like the Mezcal Rita and Smoky Wild Fashioned. The bar will also feature non-alcoholic mocktails, wine by the glass or bottle and craft beer on tap.

During what’s known at CARVE as “The Happiest Hour,” guests will enjoy $2 off every bite, 8 oz. pour of wine on tap, mixology cocktail and beer on tap, at the bar every day—Monday through Sunday, 3-6:30 p.m.

THE DESIGN

Featuring contemporary design, CARVE’s architecture incorporates elements reflective of the reinvented American grille experience. The 8,800-square-foot space features wood accents evoking the fire and wood grill theme, three private dining rooms and a spacious bar complete with outdoor patio seating and Hill Country views. The Butcher Room, located at the front of the restaurant, will pay homage to the company’s heritage and butcher shop beginnings, showcasing expertly prepared cuts of meats for guests to enjoy as they dine-in or to take home for their own cooking enjoyment.
